Merlot is a French grape variety that arrived in Piedmont in the mid-19th century. It is a large grape variety well adapted to the Langa Astigiana terroir where it offers products of the highest quality.
At the beginning of 2000, when Gianfranco confided to his father Mario (a winegrower born in 1944 very close to tradition) the intention of planting a Merlot vineyard, the latter blurted out: “what’s new? Merlot has been cultivated in Piedmont for “only” 200 years, Barbera and Dolcetto for 2000 years! Hence the name of this wine: IL NOVO.
The Piemonte Merlot “ll Novo” is born in our “Cappelletta” vineyard in the town of Bubbio. The Grapes after crushing have a maceration of 10 to 14 days, after which it is racked and decanted into steel tanks where the alcoholic fermentation ends followed by malolactic fermentation.
In spring, it is decanted into 225 liter barrels where it ages for approximately 24 months.
It is then blended and bottled and the Piemonte DOC Merot “Il Novo” is ready for consumption after two months.

Domaine Torelli
The winery of the Torelli family is located in Bubbio, near Canelli and Aqui Terme. On the sunny slopes between the Bormida and Belbo rivers, the grapes ripen perfectly. The extremely steep vineyard of San Gród is cultivated in complex manual labor.The estate Mario Torelli works in organic farming. With 7 ha of vineyards and 55,000 annual bottles, it is the prototype of the small estate that has focused on quality.
